
The Best Portuguese Tea Biscuits Ever.

These Biscuits are delicious for dipping in Tea or Coffee. I always loved these growing up. Here's the recipe for you. Try them and send pics or let me know how they turn out.
Ingredients:
1 cup of butter, softened
1 1/2 cups of sugar
5 eggs
5 cups of all-purpose flour
4 teaspoons of baking powder
Grated zest of 1 lemon or orange
4 tablespoons of lemon juice or orange juice
*** If you don't want to use lemon of orange you can replace it with 1/2 a cup of ground almonds and a teaspoon of almond extract. They are delicious.
Directions:
1- Preheat oven to 350 F. Line baking sheets with parchment paper.
2- Cream together butter and sugar until light in color and fluffy in texture.
3- Add the eggs, lemon zest or orange zest and juice and mix until well blended.
4- In a separate bowl, whisk together flour and baking powder.
5- Add flour mixture to creamed mixture, stirring until combined.
6- If dough seems dry or flaky, knead slightly.
7- Scoop up ping-pong ball sized dollops of dough.
8- Roll between your hands to form a 5-inch long "snake", even throughout the length.
9- Bring ends of the "snake" together, slightly folding one end over the other, to form a doughnut-shape with a small hole in the middle.. Or you can do like me. Just roll the dough into "lady fingers kind of cookie."
10- Place cookies 1-2 inches apart on prepared baking sheets.
11- Bake 15-18 minutes, or until golden brown.
12- Let rest on baking sheet for 2 minutes before transferring to rack to cool. Enjoy.
